Philly Cheesesteak Sandwich

- 1.5 lbs. beef (rib eye preferred)
- 1 pc. green bell pepper
- 1 pc. yellow onion
- 1/2 lb. mushroom
- 4 slices povolone cheese
- 2 T. oil
- salt to taste
- pepper to taste
- 4 hoagie rolls
Slice ribeye into thin strips. Season both sides with salt and pepper.
Cut the bell pepper and onion into long strips, and the mushrooms into bite-sized pieces.
In a large skillet, heat the oil over medium-high heat. Add onions, bell peppers and mushrooms to the skillet. Sautee until all veggies are golden brown. Remove and set aside.
Add slices of steak into the pan in one layer to sear, 1-2 minutes, then flip and sear the other side. Add the cooked veggies to the skillet and stir to combine. Top with cheese slices and set aside for a minute to allow the cheese to melt.
Stuff the mixture into toasted or untoasted hoagie buns. Serve right away and enjoy!
